Los taínos utilizaron diversos procedimientos, entre ellos el bucán, técnica<br />
usada para ahumar y cocer a baja temperatura.<br />
También cocinaban alimentos envueltos en hojas sobre brasas, enterradas<br />
en un hoyo. Encima les colocaban rescoldos, o brasas mezcladas<br />
con cenizas, para completar la cocción. Además, el salcochado, empleado<br />
en la cocina moderna, fue otra técnica aborigen, para lo cual<br />
usaban ollas de barro. Según el testimonio de Pedro Mártir de Anglería,<br />
al referirse a la cocción de la iguana, la preparaban abriéndola desde el<br />
gaznate hasta la ingle, lavándola y montándola con esmero. Luego se le<br />
colocaba en círculo, a modo de serpiente dentro de una olla con capacidad<br />
solo para su cuerpo. Entonces la rociaban con un poco de agua<br />
con pimienta (ají de la isla), la comprimían en la cazuela y la cocinaban<br />
a fuego leve, producido por cierta leña olorosa, que no producía humo.<br />

technique, for which they used earthenware pots. According to<br />
the testimony of Pedro Mártir de Anglería, when referring to the cooking<br />
of the iguana, they prepared it by opening it from the gullet to the groin,<br />
washing it and assembling it with care. Then it was placed in a circle in<br />
a pot with capacity only for its body. Then they sprayed it with a little<br />
water with pepper (chili from the island), they compressed it in the pot<br />
and cooked it over a low fire, produced by some fragrant wood, which<br />
did not produce smoke.<br />
