RÉALISATION DU<br />
BOSTOCK<br />
Couper la brioche mousseline<br />
à 2 cm d'épaisseur et la<br />
puncher ananas (photo n° 1).<br />
Lisser le dessus à la crème<br />
d'amandes, puis griller au<br />
four à 230°C pendant 8<br />
minutes. Laisser refroidir et<br />
passer au froid.<br />
MONTAGE<br />
Sangler un cercle de glace aux<br />
marrons. Insérer le bostock au<br />
centre et déposer un disque<br />
de sorbet (photo n° 2).<br />
Relisser de glace aux marrons,<br />
congeler et glacer au glaçage<br />
chocolat. Décorer.<br />
MAKING THE<br />
BOSTOCK<br />
Cut the mousseline brioche<br />
into pieces 2 cm thick and<br />
soak in pineapple punch<br />
(photo n° 1). Smooth<br />
almond cream onto the top,<br />
then grill in the oven at<br />
230°C for 8 minutes. Leave<br />
to cool and place in the<br />
refrigerator.<br />
ASSEMBLY<br />
Line a ring with chestnut ice-<br />
cream. Insert the bostock in<br />
the centre and place a disk of<br />
sorbet on top (photo no. 2).<br />
Smooth some more chestnut<br />
ice-cream on top, freeze and<br />
ice with chocolate icing.<br />
Decorate.<br />
INGRÉDIENTS<br />
350 g de farine type 55<br />
5 g de levure chimique<br />
100 de beurre demi-sel<br />
100 g de sucre semoule<br />
2 gros œufs<br />
10 cl de lait frais entier<br />
200 g de myrtilles<br />
50 g de sucre glace<br />
PROCÉDÉ<br />
Beurrer et fariner les moules à<br />
muffins. Mélanger la farine, la<br />
levure et le sel. Mélanger au<br />
fouet le beurre et le sucre<br />
jusqu'à obtention d'une<br />
consistance crémeuse.<br />
Mélanger les deux masses puis<br />
ajouter le lait pour détendre la<br />
pâte si nécessaire. Incorporer<br />
délicatement les myrtilles et<br />
répartir la pâte dans les<br />
moules. Cuire au four à<br />
190°C pendant 25 minutes<br />
environ. Sortir les muffins<br />
une fois qu'ils sont bien dorés<br />
et gonflés. Laisser tiédir sur<br />
une grille. Saupoudrer de<br />
sucre glace.<br />

DE DÉGUSTATION<br />
Déguster tiède avec de la<br />
crème fraîche et du miel de<br />
châtaigniers.<br />
INGREDIENTS<br />
350 g flour (French 55 type)<br />
5 g baking powder<br />
100 g slightly salted butter<br />
100 g caster sugar<br />
2 large eggs<br />
10 cl whole fresh milk<br />
200 g blueberries<br />
50 g icing sugar<br />
METHOD<br />
Butter and flour the muffin<br />
moulds. Mix the flour, baking<br />
powder and salt together.<br />
Whisk the butter and sugar<br />
together to a creamy<br />
consistency. Combine these<br />
two mixtures, then add the<br />
milk to dilute the paste if<br />
necessary. Incorporate the<br />
blueberries delicately and<br />
distribute the mix into<br />
moulds. Cook in the oven at<br />
190°C for around 25<br />
minutes. Take the muffins out<br />
of the oven once they have<br />
risen and are browned on top.<br />
Leave to cool on a wire rack.<br />
Powder with icing sugar.<br />

SUGGESTION<br />
Eat the muffins warm with<br />
crème fraîche and chestnut<br />
honey.
