Décortiquer et poêler les<br />
langoustines au beurre.<br />
Réaliser la compote d'oignons<br />
avec les oignons, le sucre, le<br />
vinaigre de Xérès, la<br />
grenadine, le vin rouge, le<br />
genièvre, le poivre en grains,<br />
la cannelle, le clou de girofle<br />
et les zestes d'oranges blanchis<br />
(photo n° 1). Préparer la<br />
garniture en taillant des<br />
rondelles d'aubergines d'un<br />
petit diamètre. Les cuire aux<br />
micro-ondes et les poêler avec<br />
le safran (photo n° 2).<br />
Blanchir les kumquats à l'eau<br />
pendant 5 minutes. Les<br />
rafraîchir, les couper et les<br />
passer au beurre. Réaliser<br />
ensuite la sauce en taillant en<br />
brunoise les poivrons, en les<br />
ajoutant au nuoc-mâm, au<br />
gingembre et à l'ail et en<br />
montant le tout au beurre<br />
(photo n° 3).<br />
METHOD<br />
Shell the prawns and fry them<br />
in the butter. Make an onion<br />
compote with the onions,<br />
sugar, sherry vinegar,<br />
grenadine, red wine, juniper,<br />
peppercorns, cinnamon, clove<br />
and blanched orange zests<br />
(photo no. 1). Prepare the<br />
garnish by cutting small,<br />
round slices of aubergine.<br />
Cook them in a microwave<br />
and fry with the saffron<br />
(photo no. 2). Blanch the<br />
kumquats in water for<br />
5 minutes. Cool them, cut<br />
them up and sauté in butter.<br />
Then make the sauce by<br />
dicing the peppers, adding<br />
them to the nuoc-mâm,<br />
ginger and garlic, and<br />
whisking together in the<br />
butter (photo no. 3).<br />

5 g de poivre mignonnette<br />

1 pincée de cannelle<br />
500 g d'aubergines<br />
500 g de kumquats<br />
2 g de safran en poudre<br />
200 g de poivrons rouges<br />
50 g d'ail hachée<br />
50 g de gingembre haché<br />
5 cl de nuoc-mâm<br />
350 g de beurre<br />
D RESSAGE<br />
Disposer la compote dans le<br />
bas de l'assiette et y disposer<br />
les langoustines en étoile.<br />
Dans le haut de l'assiette,<br />
intercaler des kumquats et des<br />
rondelles d'aubergines. Faire<br />
un cordon de sauce et<br />
agrémenter de pluches<br />
de coriandre.<br />

200 g red peppers<br />
50 g chopped garlic<br />
50 g chopped ginger<br />
5 cl nuoc-mâm<br />
350 g butter<br />
ARRANGEMENT<br />
Place the compote in the<br />
bottom of the dish and<br />
arrange the prawns in a star<br />
shape. In the top of the dish,<br />
alternate the kumquats and<br />
aubergine slices. Form a line<br />
of sauce and decorate with<br />
sprigs of coriander.
