PROCÉDÉ<br />
Pour la pâte à choux, faire<br />
bouillir le lait, le sel, le sucre<br />
et le beurre. Ajouter la farine<br />
hors du feu, au fouet, et lisser<br />
le tout. Ajouter les œufs en<br />
deux fois, puis les pistaches<br />

625 g fresh milk<br />
40 g skimmed milk powder<br />
70 g butter<br />
30 g fresh egg yolks<br />
120 g caster sugar<br />
40 g invert sugar<br />
70 g pistachio paste<br />
5 g kirsch<br />
5 g ice-cream stabilizer<br />

SORBET<br />
160 g caster sugar<br />
60 g atomized glucose<br />
550 g forest fruit purée<br />
10 g lemon juice<br />
220 g water<br />
3 g sorbet stabilizer<br />
METHOD<br />
For the choux paste, boil the<br />
milk, salt, sugar and butter<br />
together. Add the flour away<br />
from the heat using a whisk,<br />
and stir until smooth. Add<br />
the egg in two steps, then the<br />

hachées (photo n° 1). Dresser<br />
à la poche à douille unie n° 8<br />
sur feuille Exopat (photo<br />
n° 2) et saupoudrer de sucre<br />
glace avant de mettre au four<br />
à 190C° pendant 20 minutes,<br />
tirage ouvert.<br />
Pour la glace à la pistache,<br />
chauffer et pasteuriser à 85°C<br />
tous les ingrédients, à<br />
l'exception du kirsch. Laisser<br />
maturer 24 heures à 0/+3°C<br />
et ajouter le kirsch avant<br />
de turbiner.<br />
Pour le sorbet fruits des bois,<br />
mélanger le stabilisateur et le<br />
sucre semoule. Faire chauffer<br />
l'eau et verser le premier<br />
mélange en pluie. Ajouter le<br />
glucose atomisé et stabiliser à<br />
83°C. Verser sur la purée de<br />
fruits et ajouter le jus de<br />
citrons jaunes. Mélanger et<br />
laisser maturer à 0/+3°C<br />
pendant 24 heures avant de<br />
turbiner.<br />
DRESSAGE<br />
DE L'ASSIETTE<br />
Couper les choux en deux.<br />
Dans une poche à douille<br />
cannelée n° 12, mettre en<br />
même temps la glace et le<br />
sorbet, puis garnir<br />
les demi choux<br />
(photo n° 3).<br />
Replacer les<br />
chapeaux et<br />
saupoudrer de sucre<br />
glace. Garnir<br />
l'assiette et y verser<br />
un jus de<br />
framboises.<br />
COMPOSITION<br />

Pistachio ice-cream<br />
Forest fruit sorbet<br />
Icing sugar<br />
chopped pistachios (photo<br />
no. 1). Using a plain no. 8<br />
nozzle, pipe out onto an<br />
Exopat sheet (photo no. 2)<br />
and sprinkle with icing sugar<br />
before placing in the oven at<br />
190°C for 20 minutes, vents<br />
open.<br />
To make the ice-cream, heat<br />
and pasteurize all the<br />
ingredients, except for the<br />
kirsch, at 85°C. Leave to<br />
mature for 24 hours at<br />
0/+3°C, then add the kirsch<br />
before freezing.<br />
To make the sorbet, mix the<br />
stabilizer with the caster<br />
sugar. Heat the water and<br />
sprinkle the first mixture on<br />
top. Add the atomized<br />
glucose and stabilize at 83°C.<br />
Pour onto the fruit purée and<br />
add the lemon juice. Mix and<br />
leave to mature at 0/3°C for<br />
24 hours before freezing.<br />
ASSEMBLY<br />
OF THE DISH<br />
Cut the choux balls in two. In<br />
a piping bag with a fluted no.<br />
12 nozzle place, at the same<br />
time, the ice-cream and the<br />
sorbet, then fill the<br />
half choux balls<br />
(photo no. 3). Put<br />
the tops back on and<br />
sprinkle with icing<br />
sugar. Garnish the<br />
dish and pour<br />
raspberry juice on<br />
top.
