attraverso due paradigmi: in<br />
primo luogo ridare valore al cibo<br />
(riducendo gli sprechi e riscoprendo<br />
il piacere di gustare alimenti veri,<br />
innescando circoli virtuosi di<br />
consumo) e in secondo luogo ritornare<br />
a praticare lavori a contatto<br />
con la terra o con il mare.<br />
Tutto ciò non significa “tornare indietro”<br />
e scordare il progresso – accusa<br />
mossa spesso a Slow Food –<br />
ma avvalersi proprio del progresso<br />
per un uso più consapevole delle<br />
risorse.<br />
Incentivare il rapporto fra giovani e<br />
cibo rappresenta una sfida per il<br />
futuro, significa dare loro un nuovo<br />
messaggio, ripristinare un equo<br />
rapporto col cibo e di conseguenza<br />
con la terra e con se stessi; significa<br />
creare la consapevolezza dell’importanza<br />
di diventare i futuri<br />
cultori e detentori dei saperi di terra<br />
e mare affinché possano contribuire<br />
a costruire nuovi equilibri socio-economici.<br />
Una scelta, infine, che dovrà essere<br />
remunerativa per chi deciderà di<br />
intraprenderla.<br />
Slow Food <strong>Liguria</strong> ha recentemente<br />
fondato un gruppo di ragazzi<br />
“under 30” che ha iniziato a lavorare<br />
per diffondere la consapevolezza<br />
che è importante preservare<br />
il patrimonio eno-gastronomico e<br />
rinnovarlo in chiave moderna, per<br />
una riqualificazione anche della regione<br />
in cui si vive.<br />

The antidote to the crisis lies in the<br />
young. They have the possibility to<br />
carry on this battle through two<br />
paradigms. Firstly, by giving value<br />
back to food (reducing the waste<br />
and redis<strong>cover</strong>ing the pleasure of<br />
true food, creating virtuous circles<br />
of consumption). Secondly, by<br />
returning to work that is in<br />
contact with the earth and the<br />
sea.<br />
This does not mean “going back in<br />
time”, and rejecting progress –<br />
accusations often leveled at<br />
Slow Food – but using progress to<br />
better use resources. To stimulate<br />
the relationship between young<br />
people and food is a challenge for<br />
the future. It means giving them a<br />
new message, putting back<br />
together a balanced relationship<br />
between food and the<br />
consequences for the Earth and<br />
for themselves. It means making<br />
them aware of the importance of<br />
becoming future cultivators and<br />
keepers of the knowledge of the<br />
earth and the sea in order to be<br />
able to contribute to the building<br />
of a new socio-economic<br />
equilibrium. A choice, which, in<br />
the end, should reward he who<br />
takes this path.<br />
Slow Food <strong>Liguria</strong> has recently<br />
founded an under 30 youth group<br />
which has begun to work to<br />
spread the knowledge that it is<br />
important to preserve the wine<br />
and gastronomy heritage that we<br />
have, and to renew it in a modern<br />
light, to also improve the region<br />
where we live.<br />

Dal 16 al 19 settembre, Città di Bra e Slow Food Italia organizzano l’ottava edizione<br />
di Slow Cheese, la manifestazione internazionale a cadenza biennale dedicata alle<br />
forme del latte: l’evento, dalla forte valenza politica, vede protagoniste le tematiche<br />
ambientali, agricole e alimentari legate ai formaggi. Nelle etichette dei prodotti<br />
caseari di capra, pecora e vacca; nei racconti di produtori e alpeggiatori; nei dibattiti<br />
con esperti e ricercatori del settore si concentra il dialogo sul tema di questa<br />
edizione: latti, mestieri, territori.<br />
Ospite d’onore la Francia, che da sempre tutela le produzioni a latte crudo, elemento<br />
imprescindibile di qualità gastronomica, che garantisce approvvigionamento locale,<br />
metodi di lavorazione naturali e valorizzazione delle razze autoctone. La Gran Sala le<br />
bancarelle del Mercato e dei Presidi, i Laboratori del Gusto e del Latte, la Piazza della<br />
Resistenza Casearia e, infine, i Master of Food sono solo alcuni degli spazi dove<br />
incontrare le centinaia di produttori italiani e stranieri riuniti ancora una volta per<br />
l’appuntamento braidense.<br />
From September 16 to 19, the City of Bra and Slow Food Italia have organized the<br />
8th Slow Cheese, an international cheese fair dedicated every two years to cheeses.<br />
The event with a strong political flavor will address environmental, agricultural, and<br />
food themes related to cheeses. On the labels of goat cheese products, in the debates<br />
with experts and researchers in the sector, in the tales of the producers and Alpine<br />
pasture sheepherders, the dialogue will concentrate on this year’s themes: milks,<br />
trades, territories.<br />
Honored guest is France, who has always carefully protected it cheese production, an<br />
element par excellence of its gastronomy, who guarantees local provisioning, natural<br />
methods of working, and the value of heirloom races. The Gran Sala, the market stalls<br />
and presidiums, the Taste and Milk Workshops, the Piazza della Resistenza Casearia, and<br />
the Masters of Food are some of the spaces where you can meet hundreds of the Italian<br />
and foreign producers who have gathered once again for this rendezvous in Bra.<br />
