patate quarantine, cipolla, uova, formaggio<br />
e lardo, cotta sotto una “campana” di ghisa<br />
e adagiata sopra foglie essiccate di castagno che<br />
la aromatizzano. Si mangia salendo al paesino di<br />
Sopralacroce dopo essersi lasciati alle spalle, a<br />
Borzonasca, l’oratorio<br />
di San Rocco con il suo<br />
portale d’ardesia cinquecentesco.<br />
Siamo nella valle Sturla<br />
che da Chiavari sale<br />
verso gli Appennini:<br />
dalla piazza centrale di<br />
Borzonasca la strada<br />
sfiora la parrocchiale e<br />
s’inerpica ancora, imboccando<br />
così la valle<br />
d’Aveto, una delle più<br />
boscose di <strong>Liguria</strong>. In<br />
cima Santo Stefano,<br />
1012 metri d’altezza,<br />
dominato dal duecentesco<br />
castello dei Malaspina<br />
che spadroneggiarono<br />
qui per secoli.<br />
D’inverno si scia se nevica<br />
a sufficienza,<br />
mentre d’estate si possono<br />
fare lunghe passeggiate<br />
sull’anello che<br />
collega i monti Aiona,<br />
Penna e Maggiorasca,<br />
dove a settembre si celebra<br />
la fungata, in onore del fungo locale, lo<br />
spinarolo.<br />
Dall’antichità si allevano le mucche cabannine,<br />
una razza locale dal cui latte si produce il San<br />
Sté, ottimo formaggio leggermente piccante.<br />
A ottobre le mandrie tornano alle stalle dagli alpeggi<br />
e se il tempo è clemente si può ancora visitare<br />
lo smeraldino lago delle Lame, a circa mille<br />
metri, che si trova all’interno del Parco<br />
naturale regionale dell’Aveto.<br />
Imperdibile una visita nella Riserva integrata delle<br />
Agoraie, punteggiata di piccoli (e rari in <strong>Liguria</strong>)<br />
laghi glaciali, un habitat particolare dove si<br />
trova anche una piccola felce, relitto dell’ultima<br />
glaciazione.<br />
Ma Borzonasca, l’importante centro del fondovalle,<br />
merita una sosta per il passato medievale<br />
testimoniato dalla Chiesuola posta in fondo a via<br />
Raggio e per la pasticceria Macera, dove si possono<br />
comprare le sublimi rotelle al burro, ruette<br />
in dialetto, immutati dal 1862.<br />

Baciocca is a potato pie. Its flaky pastry crust<br />
holds a filling of quarantine potatoes, onions,<br />
egg, cheese and lard, baked under a cast iron<br />
bell and perfumed by dried chestnut leaves placed<br />
under the pie to give it aroma. Eat it while climbing<br />

We are in the Sturla<br />
Valley which goes from<br />
Chiavari, on the Riviera,<br />
up towards the<br />
Apennines. From the<br />
central piazza of<br />
Borzonasca, the road<br />
skirts the parish church<br />
and climbs yet more, to<br />
enter the Aveto Valley,<br />
one of the most<br />
forested in <strong>Liguria</strong>. At<br />
the summit, Santo<br />
Stefano d’Aveto, 1012<br />
meters above sea level,<br />
is dominated by the<br />
Castle of the Malaspina<br />
built in the 1200s,<br />
which has protected it<br />
for centuries. In the<br />
winter, if it snows<br />
enough, skiers flock<br />
here. In the summer you<br />
can take long walks that<br />
loop around Aiona, Penna, and Maggiorasca<br />
Mountain. In September the town’s famous<br />
mushroom festival, the fungata, celebrates the local<br />
mushroom, the spinarolo. Since ancient times,<br />
pastors here have raised cabannine cows, an<br />
heirloom brand whose milk makes a wonderful,<br />
slightly spicy cheese in Santo Stefano. In October<br />
the herds return to their winter stalls from their<br />
Alpine meadow summers, and if weather permits,<br />
you can still visit the emerald lake of the Lame, at<br />
around a thousand meters height, which is located<br />
inside the boundaries of the Natural Regional Park<br />
of the Aveto. Not to be missed is a visit to the<br />
integrated Reserve of the Agorale, which is dotted<br />
with tiny (and rare in <strong>Liguria</strong>) glacial lakes, a special<br />
habitat which still hosts a rare fern, a survivor from<br />
the last Ice Age.<br />
But Borzonasca, the important town at the center<br />
of the valley, is also worth a stop as its Chiesuola<br />
[Little Church] bears witness to its medieval past (at<br />
the bottom of Via Raggio), and its pastry shop,<br />
