città: «Negli anni ‘80 – racconta – mi è capitato di<br />
trovarmi a St. Paul, in Minnesota, e girando per i negozi<br />
ho visto gli amaretti Virginia in vendita, una cosa<br />
che non mi aspettavo».<br />
Gli amaretti sono una grande ricchezza per Sassello.<br />
«L’industria dolciaria è la risorsa più importante che<br />
abbiamo, da’ lavoro a più di 200 persone, portando<br />
ricchezza e reddito alle nostre famiglie, ma non solo»,<br />
continua Scasso. I piccoli laboratori artigianali di una<br />
volta si sono trasformati in industrie moderne, senza<br />
però snaturare l’artigianalità del prodotto che l’ha<br />
sempre contraddistinto nel mondo della produzione<br />
dolciaria. Ci sono fabbriche ormai internazionali, come<br />
la Virginia e altre che ancora mantengono una<br />
dimensione più ridotta, come la storica impresa Giacobbe.<br />
«Noi siamo i più piccoli – spiegano – con appena<br />
otto soci e due dipendenti. Ma tra i soci c’è ancora<br />
chi porta il cognome Giacobbe: Romina, una<br />
nipote del fondatore». Altri (in tutto sono sei le aziende:<br />
oltre alle due già citate ci sono Adr Sassellese, Baratti<br />
e Milano, Cidag e Isaia) propongono, invece, una<br />
produzione diversificata: anche i canestrellini sono<br />
diventati famosi. Ma Sassello sa prendere per la gola<br />
non solo con il dolce: l’autunno è la stagione dei funghi.<br />
Una produzione così importante e di qualità, che<br />
da quest’anno avranno alle spalle anche un ente promotore.<br />
Il vicesindaco Scasso parla di una iniziativa a<br />
sostegno di questo prodotto del bosco: «Abbiamo deciso<br />
di creare un Consorzio dei Funghi, che riguarderà<br />
5000 ettari di sottobosco, diventando il più grande<br />
della <strong>Liguria</strong>. Il Consorzio è fondamentale, perché<br />
tutelerà l’ambiente, ma soprattutto ci permetterà di<br />
iniziare l’iter burocratico per chiedere l’Igp del fungo<br />
di Sassello. Il migliore del mondo».<br />

bittersweet (and soft) macaroons are crucially important<br />
to the town. They are a great economic resource. “Pastrymaking,<br />
in fact, is the greatest resource that we have. It<br />
employs more than 200 people, bringing good earnings to<br />
our families,” continues Scasso, and there is more to<br />
amaretti-making than mere money. Small pastry<br />
workshops have gradually been transformed into modern<br />
industry, but the artisan nature of the product has<br />
remained. This is distinguishes true amaretti. International<br />
factories, like that in Virginia, contrast with the small<br />
family firms of Sassello like the historic Giacobbe<br />
company. “We might be the smallest amaretti makers<br />
around,” they explain, “with eight partners and two<br />
employees. But some of our partners still bear the<br />
Giacobbe name, like Romina, the granddaughter of the<br />
founder of the company.” Other family firms have<br />
diversified, adding other traditional products, like the<br />
canestrellini which have also made a name for<br />
themselves. Adr Sassellese, Baratti e Milano, Cidag, and<br />
Isaia have taken this route, bringing the total of amarettimakers<br />
in Sassello to six.<br />
If you go to Sassello to sample their amaretti, go in<br />
autumn, the season famous for its wild mushrooms. The<br />
quality of production is so important that this year a<br />
promotional entity has been created to support it.<br />
Deputy Mayor Scasso explains, “We have decided to<br />
make a Mushroom Consortium, <strong>cover</strong>ing 5,000 hectares<br />
of woods, the greatest in <strong>Liguria</strong>. The consortium is of<br />
vital importance to protect the environment, and also<br />
will help us initiate the bureaucratic process to ask for<br />
an IGP appellation of origin for Mushrooms from<br />
Sassello, the best in the world.”
