Instituto Maniva<br />

Fundado em 2007, o Instituto Maniva é uma associação sem fins<br />

lucrativos que vê a gastronomia brasileira como ferramenta <strong>de</strong><br />

transformação social e ambiental. Sua missão é manter viva a herança<br />

alimentar e a biodiversida<strong>de</strong> agrícola do <strong>Brasil</strong>, divulgando alimentos<br />

que compõem a cultura gastronômica nacional e incentivando<br />

a capacitação profissional nas áreas da culinária e da produção da<br />

agricultura familiar. Os ecochefs Maniva são cozinheiros renomados<br />

do <strong>Rio</strong> <strong>de</strong> <strong>Janeiro</strong> que realizam projetos educacionais e ambientais<br />

promovendo a i<strong>de</strong>ntida<strong>de</strong> culinária brasileira. Todos os sábados pela<br />

manhã o Instituto Maniva está presente no Circuito Carioca <strong>de</strong> Feiras<br />

Orgânicas do Jardim Botânico, divulgando suas ativida<strong>de</strong>s, enquanto<br />

os ecochefs Maniva preparam <strong>de</strong>liciosas tapiocas.<br />

Foun<strong>de</strong>d in 2007, the Instituto Maniva is a non-profit organization<br />

which sees Brazilian gastronomy as an instrument for social and<br />

environmental transformation. Its mission is to keep the Brazilian<br />

food heritage and its farming biodiversity alive by popularizing foods<br />

that are part of the national gastronomic culture and encouraging<br />

vocational training in cookery and family farming. The so-called<br />

Ecochefs Maniva are distinguished cooks from <strong>Rio</strong> <strong>de</strong> <strong>Janeiro</strong>, where<br />

they organize educational and environmental projects to promote the<br />

i<strong>de</strong>ntity of Brazilian cookery. Every Saturday morning the Instituto<br />

Maniva is present at the Carioca Organic Market Circuit at the Jardim<br />

Botânico, where it spreads the word about its activities and its<br />

“ecochefs” prepare <strong>de</strong>licious tapioca recipes.<br />
