A pequena trattoria no Jardim Botânico é o mais recente estabelecimento<br />
<strong>de</strong> Clau<strong>de</strong> Troisgros na cida<strong>de</strong>. Ambiente e cardápio remetem<br />
ao universo familiar do chef, que foi buscar inspiração nas lembranças<br />
da convivência com a avó italiana, dona <strong>de</strong> algumas das receitas<br />
que inspiram sua cozinha. A preocupação com a procedência dos<br />
ingredientes é semelhante à do restaurante <strong>de</strong> alta gastronomia que<br />
o chef mantém a poucos passos dali. Ervas e vegetais usados vêm<br />
dos mesmos fornecedores.<br />
This small trattoria in Jardim Botânico is Clau<strong>de</strong> Troisgros's most<br />
recent business venture in the city. The atmosphere and menu reflects<br />
his family background and is inspired by the memory of his Italian<br />
grandmother, some of whose recipes have influenced his cooking.<br />
Here the commitment to the traceability of ingredients matches that<br />
of Clau<strong>de</strong>'s haute cuisine restaurant just a few yards away. Herbs and<br />
vegetables are sourced from the same suppliers.<br />
