Initially a typical suburban eatery in northern <strong>Rio</strong>, this<br />

establishment won its spurs in the city with its range of artisan<br />

sausages, produced in the small factory on the floor above. The main<br />

menu specialty is the crispy pork knuckle, cooked on a spit in full view<br />

of customers. Besi<strong>de</strong>s <strong>de</strong>voting great care to the quality of the food<br />

they serve, the owners are also proud to fly the flag of commitment<br />

to environmental responsibility by recycling used cans and cardboard<br />

Enchendo Linguiça<br />

O botequim começou como um típico estabelecimento <strong>de</strong> bairro na<br />

Zona Norte do <strong>Rio</strong>, mas ganhou fama na cida<strong>de</strong> pela varieda<strong>de</strong> <strong>de</strong><br />

linguiças artesanais, produzidas na fabriqueta instalada no mezanino<br />

da casa. A maior atração do cardápio é o joelho <strong>de</strong> porco à pururuca,<br />

preparado na frangueira, diante dos olhos dos clientes. Além da preocupação<br />

com a qualida<strong>de</strong> do que servem, os sócios do bar assumem<br />

a ban<strong>de</strong>ira da responsabilida<strong>de</strong> socioambiental: entre outras práticas,<br />

as latas e o papelão usados são encaminhados para reciclagem.<br />
