Nesse passo, a busca pela melhor matéria-prima é preocupação<br />
constante. O fubá orgânico, moído em moinho <strong>de</strong> pedra, vem <strong>de</strong><br />
Amarantina. De Itabirito, vem a canjiquinha e o mandiopã artesanal.<br />
De Boa Esperança, um queijo meia cura que a chef <strong>de</strong>ixa afinar por<br />
alguns meses. Também do interior <strong>de</strong> Minas, chega o café orgânico,<br />
preparado em coador <strong>de</strong> pano, a brindar o cliente no final da refeição.<br />

chefs, has an almost obsessive respect for the produce she uses.<br />
A tireless researcher, she analyzes the possibilities of every single<br />
ingredient, using only the very finest raw materials. The organic,<br />
stone-ground cornmeal comes from Amarantina, the maize and<br />
artisan manioc flakes from Itabirito, the semi-cured cheese, which<br />
she leaves to age for a few months, from the interior of Minas Gerais.<br />
At the end of the meal, diners are toasted with a cup of cloth-filtered<br />
organic coffee, also from the interior of Minas Gerais.<br />
