tionality and stability of neotame included powdered tabletop preparations and<br />

chewing gum.<br />

The greatest stability of neotame is in low moisture products such as tabletop<br />

preparations and PSD mixes; in these formulations, neotame shows little or<br />

no degradation after significant storage times. Neotame is also stable after normal<br />

commercial processing and storage times for products represented in the matrix<br />

such as hot-packed still beverages, cake, yogurt, and CSD.<br />

Results for the product matrix model demonstrate that neotame is functional<br />

and stable as a sweetener in a wide range of product applications. The products<br />

included in the matrix were chosen to represent the wide range of chemical and<br />

physical conditions (e.g., pH, temperature, moisture) provided during the manufacture,<br />

packaging, and storage of commercially produced food and beverage
