mixtures are being used in many foods and beverages. Fig. 3 shows the taste<br />

profile of an aqueous solution sweetened with a saccharin/aspartame/cyclamate<br />

mixture in the ratio of 1:5:8, respectively. These data clearly demonstrate that<br />

combined sweeteners result in an improved sweetness profile compared with each<br />

of the single sweeteners. In addition to the sweetness profile, the quality of the<br />

taste is significantly improved, as shown in organoleptic tests conducted in our<br />

laboratories. Verdi and Hood (11) provide a good summary of some of the advantages<br />

of intense sweetener blends. Applications of combined sweeteners in various<br />

products are discussed in the remaining section of this chapter.<br />

I. APPLICATIONS<br />

A. Tabletop<br />

Tabletop sweeteners are a major product category used by consumers for a variety<br />

of applications. They are commonly available as powders packed in bulk or sachets,<br />

as tablets, or as liquids. The effective amount of sweetener or sweetener<br />

combinations required to provide the sweetness equivalency of two teaspoons
