C. 55% High Fructose Corn Syrup<br />

The refined glucose isomerase–treated liquor may be passed through fractionation<br />

units to enrich the fructose content to 80–95%. This material is filtered and<br />

refined by carbon and ion exchange treatment. It may be evaporated and provided<br />

as a commercial product with properties similar to crystalline fructose in liquid<br />

applications; however, more typically, this high fructose–containing syrup is<br />

blended with the 42% HFCS to a concentration of about 55% fructose and evaporated<br />

to become the commercial 55% HFCS. The dextrose from the fractionation<br />

unit is fed back to the isomerization columns in the 42% HFCS process. This<br />

process is shown in Fig. 5, and a comparison of the composition of these three<br />

commercially available products is shown in Table 4.
