Figure 8 shows that lactitol tablets absorb hardly any water.<br />

In pharmaceutical tablets, direct compressible sorbitol and mannitol are<br />

most often used. The advantage of lactitol in this application is the low hygroscopicity<br />

compared with sorbitol and the better solubility compared the mannitol.<br />

With respect to tablet hardness lactitol performs in between (Fig. 9). This makes<br />

direct compressible lactitol a good alternative.<br />

G. Preserves<br />

The solution to low-calorie preserves is often found in a low dry solids preserve.<br />

To combine this with lactitol will result in an even larger reduction in calories,<br />

while maintaining the good flavor and texture.<br />

United States Lactitol is self-affirmed GRAS. The petition to affirm lactitol as<br />

VIII. CONCLUSION<br />

Lactitol is a unique, commercially available bulk sweetener. Its physical properties<br />

guarantee optimal product performance during processing and storage of the
