Christmas and New Year’s Greet<strong>in</strong>g:<br />
„Nixtieklek Milied tajjeb u<br />
is-sena t-tabja!“<br />
The Maltese are highly religious Catholics. Although<br />
Malta is the smallest state <strong>in</strong> the EU, it has 365 churches,<br />
one for every day of the year. Strangely enough,<br />
god <strong>in</strong> Maltese is called Allah, s<strong>in</strong>ce <strong>in</strong> the course of its<br />
history different nations have left their traces on the<br />
island, and so did the Arabs. Apart from them there<br />
were (<strong>in</strong> chronological order) the Phoenicians, the<br />
Greek, the Carthag<strong>in</strong>ians, the Romans, the Vandals,<br />
the Goths, the Normans, the Aragonese, the French and<br />
f<strong>in</strong>ally the British. Maybe that is why the Maltese are<br />
supposed to have someth<strong>in</strong>g of many nations: The talk<br />
like Arabs, write like Europeans, gesture like Italians<br />
and imitate the British. At least they celebrate Christmas<br />
<strong>in</strong> Maltese style <strong>–</strong> with their very own customs.<br />
A typical Maltese tradition is the public display of<br />
nativity scenes, or presepji, which at times are very<br />
old. A nativity scene from the year 1826 can be admired<br />
at the Md<strong>in</strong>a monastery. In addition to the usual<br />
characters found <strong>in</strong> a nativity scene made of burnt<br />
clay <strong>–</strong> Maria, Joseph and the Christ-child, the three<br />
Wise Men, shepherds and sheep <strong>–</strong> Maltese nativity<br />
scenes display many additional figures: street s<strong>in</strong>gers,<br />
pipers and drummers, coachmen feed<strong>in</strong>g their horses<br />
and a jester want<strong>in</strong>g to make Jesus laugh with crazy<br />
dances. There are no limitations to the imag<strong>in</strong>ation of<br />
the builders of nativity scenes. To wrap the nativity<br />
scenes <strong>in</strong> a dense forest made of bizarre plants and<br />
make them look even more <strong>in</strong>terest<strong>in</strong>g wheat, corn<br />
and canary-seeds are sown on cotton balls <strong>in</strong> flat trays<br />
on the first day of advent. These seeds are regularly<br />
watered, shoot up and create a dense network as white<br />
as the beard of St. Claus.<br />
On Christmas Eve a procession passes through the<br />
narrow streets and lanes of the small republic dur<strong>in</strong>g<br />
the early morn<strong>in</strong>g hours already, display<strong>in</strong>g the Jesus<br />
child. And at mass, children perform the Christmas<br />
story and pray s<strong>in</strong>ce, after all, it is Christmas, the<br />
celebration of the child!<br />
The traditional Christmas menu comprises Timpana,<br />
which are macaroni baked <strong>in</strong> crispy dough.<br />

Timpana<br />
1 egg-plant, salt, pepper, v<strong>in</strong>egar,<br />
2 onions (medium-sized), 150 g streaky bacon,<br />
200 g chicken livers, 50 g butter,<br />
200 g m<strong>in</strong>ced beef, 200g m<strong>in</strong>ced pork,<br />
2 tbsp tomato purée, 1⁄4 ltr meat stock,<br />
400 g puréed tomatoes (t<strong>in</strong>ned),<br />
450 g deep-frozen puff pastry, flour,<br />
500 g macaroni, olive oil, 4 eggs,<br />
150 g parmesan cheese<br />
Cut the egg-plant <strong>in</strong>to small dice and soak <strong>in</strong> cold<br />
water. Add half a teaspoon of salt and two tablespoons<br />
of v<strong>in</strong>egar.Peel and dice the onions. Cut<br />
the bacon <strong>in</strong>to small cubes. Clean the livers and<br />
cut <strong>in</strong>to cubes. Add 30 g butter to a skillet and<br />
braise the onions and bacon until transparent.<br />
Dry the egg-plant and add. Steam for two m<strong>in</strong>utes,<br />
add the m<strong>in</strong>ced meat and braise for a further<br />
four m<strong>in</strong>utes. Stir and toss for the m<strong>in</strong>ced meat to<br />
break up. Add the cubed liver and fry for a further<br />
three m<strong>in</strong>utes.<br />
Heat the meat stock and tomato purée and puréed<br />
tomatoes. Pour over the meat mixture. Season<br />
with salt and pepper and br<strong>in</strong>g to the boil. Simmer<br />
for 20 m<strong>in</strong>utes at a low heat. Remove from<br />
the stove and allow to cool. Boil the pasta al dente<br />
accord<strong>in</strong>g to <strong>in</strong>structions on the packet; dra<strong>in</strong> and<br />
allow to cool. Pre-heat the oven to 200 °C. Whisk<br />
the eggs with five tablespoons of water, sett<strong>in</strong>g six<br />
table spoons of this mixture aside. F<strong>in</strong>ely grate the<br />
parmesan cheese and blend <strong>in</strong> with the eggs. Add<br />
the pasta and blend aga<strong>in</strong>, then add the meat sauce.<br />
L<strong>in</strong>e a greased bak<strong>in</strong>g dish (approx. 35x23 cm)<br />
with two-thirds of the rolled out puff pastry so<br />
that the edges are also covered. Pour <strong>in</strong> the pasta<br />
and cover with the rema<strong>in</strong><strong>in</strong>g dough. Brush the<br />
edges with egg and press down firmly. Then<br />
brush the surface with egg and evenly prick holes<br />
<strong>in</strong>to it for the steam to escape. Bake <strong>in</strong> the centre<br />
of the oven for approx. 60 m<strong>in</strong>utes.<br />
A further Christmas attraction is the recurrent pantomime<br />
show at the Manoel theatre <strong>in</strong> the capital of<br />
Valletta, a wonderful enjoyment for old and young,<br />
s<strong>in</strong>ce it comb<strong>in</strong>es merry slapstick comedy for children<br />
and ambiguous satire for adults.
