A solid range of colours and hues are also on offer<br />
with Oakleaf and Lollo cultivars. Field tests of these<br />
types too have been running for the past couple of<br />
years not only for head yield but also for leaf quality.<br />
The cultivars that have been promoted to the marketplace<br />
so far are the Lollo Lugano and Satine from<br />
Rijk Zwaan; Onyx and Soltero from Nunhems; the<br />
Oakleaf 79-94 and 79-12 from Rijk Zwaan; and<br />
Cedar and Navara from Nunhems.<br />
If we run the gamut from Iceberg to Oakleaf, with<br />
Butterhead, Romaine, Multileaf and Lollo in<br />
between, we find that the field tests involve not just<br />
crop response to management practices but also<br />
assessment of such parameters as colour, oxidation<br />
susceptibility, leaf firmness, ease of handling, processing<br />
yield, and leaf resistance to the phases of<br />
washing and drying.<br />
All of this care and attention is aimed at ensuring that<br />
when these varieties get to the table, consumers will<br />
be confidant that no leaf has been left unturned to<br />
ensure they have the best on offer in terms of flavour<br />
and taste, colour and shape.<br />
It seems likely that in the span of a few short years<br />
head lettuce will become a viable alternative to traditional<br />
leafy types, especially in winter.<br />

Consumatore soddisfatto<br />
Ampia gamma di colori e sfumature offrono anche<br />
Foglia di quercia e Lollo, anche esse da qualche anno<br />
valutate non solo per l’utilizzo a cespo, ma anche per<br />
prodotto da sfogliare. Già utilizzate a tale scopo risultano<br />
le Lollo Lugano e Satine di Rijk Zwaan; Onyx e<br />
Soltero di Nunhems; le Foglia di quercia 79-94 e 79-12<br />
in casa Rijk Zwaan; Cedar e Navara in casa Nunhems.<br />
Dalle Iceberg alla Foglia di quercia, passando per<br />
Cappuccina, Romana, Multifoglia e Lollo, ogni giorno,<br />
oltre a valutare le caratteristiche agronomiche, si va ad<br />
analizzare una serie di parametri quali: colore, ossidazione,<br />
consistenza delle foglie, lavorabilità, resa alla lavorazione,<br />
effetto lavaggio (ovvero la resistenza della foglia<br />
alle varie fasi di lavatura e asciugatura).<br />
Tutto questo allo scopo di garantire al consumatore finale<br />
sempre il meglio, cercando di soddisfare nel più efficace<br />
dei modi i vari gusti, di sapore, colore e forma che<br />
quest’ultimo possa desiderare.<br />
Probabilmente, nel giro di qualche anno le lattughe a<br />
cespo andranno a rappresentare una valida alternativa alle<br />
lattughe da taglio, soprattutto nel periodo invernale.
