them from freezing together; but the <str<strong>on</strong>g>insulati<strong>on</strong></str<strong>on</strong>g> between the<br />

double walls of the structure was relied up<strong>on</strong> for the reas<strong>on</strong>-<br />

able preservati<strong>on</strong> of the ice during the warmer m<strong>on</strong>ths, while<br />

the house was being emptied of its valual3le c<strong>on</strong>tents. The<br />

ice was stored in the smaller uninsulated structures in such<br />

fashi<strong>on</strong> that a space of approximately two feet was left all<br />

around the house between the walls and the pile of ice blocks.<br />

This space was filled with sawdust as the tiers of ice were<br />

laid, and sawdust was sometimes placed between layers to a<br />

thickness of several inches. Over the top layer, sawdust was<br />

piled to a depth of several feet; and louvre-windows at dif-<br />

ferent levels in either end of the house served to ventilate<br />

the space over the ice and directly under the uninsulated roof,<br />

to prevent superheating of the air in that space <strong>on</strong> summer<br />

days with c<strong>on</strong>sequent excessive meltage of the ice in the top<br />

layers.<br />

The business of harvesting, storing and dispensing large<br />

quantities of natural ice was built <strong>on</strong> the c<strong>on</strong>stantly growing<br />

demand for the use of such ice by brewers, packers and large<br />

dealers in food products, the trade gradually extending to the
