REFRIGERATED SODA FOUNTAIN 421<br />

Insulated Draft Ann.—This is another exclusive Liquid feature that<br />

helps to produce the w<strong>on</strong>derful results certified to by Prof. Gebhardt of<br />

The Armour Institute.<br />

Metal is a thermal c<strong>on</strong>ductor, that is, it c<strong>on</strong>ducts heat just as a wire<br />

c<strong>on</strong>ducts electricity. An uninsulated metal draft arm will pick up heat<br />

from room temperature and raise the temperature of the water drawn<br />

from the coolers.<br />

The Liquid draft is made of stamped nickel silver, silver plated, and is<br />

filled with <strong>cork</strong>, insulating the block tin tube which carries the water from<br />

the coolers to the head of the draft arm.<br />

Aside from its actual value in c<strong>on</strong>serving refrigerati<strong>on</strong>, the draft is<br />

worth while by reas<strong>on</strong> of its attractive appearance.<br />

The old stereotyped design is gotten away from and the new type<br />

outfit adds materially to the appearance of the fountain.<br />

There is also provided a perfectly sanitary channel for the flow of<br />

soda water from where it leaves the coolers up to the time it is dispensed<br />

into a glass for service to a customer.<br />

Block tin is the <strong>on</strong>ly sanitary metal impervious to the chemical acti<strong>on</strong><br />

of soda water or carb<strong>on</strong>ic gas.<br />

Breaking Metal Co>ifacfs.—\leta\ is a thermal c<strong>on</strong>ductor, that is, it<br />

c<strong>on</strong>ducts heat or cold. Fig. 209 shows how all metal c<strong>on</strong>tacts between<br />

the top cappings nad the linings are broken.<br />

If this was not d<strong>on</strong>e the heat from the room temperature would be<br />

communicated to the metal capping and carried into the box through c<strong>on</strong>-<br />

tact with the metal linings. This would result in putting an unnecessary<br />

load <strong>on</strong> the refrigerating unit, soft ice cream, and loss through shrinkage.<br />

Completely Insulated Syrup Enclosure.—The illustrati<strong>on</strong> shows some<br />

very radical changes in the c<strong>on</strong>structi<strong>on</strong> of the Syrup Enclosure, all made<br />

to c<strong>on</strong>serve refrigerati<strong>on</strong>.<br />

The syrup jars are <str<strong>on</strong>g>complete</str<strong>on</strong>g>ly enclosed and the enclosure is insulated<br />

with slabs of pure <strong>cork</strong> board at fr<strong>on</strong>t, ends, top and back.<br />

The fr<strong>on</strong>t of the enclosure is faced with Bakelite panels, mahogany<br />

color, which add to the appearance and afford additi<strong>on</strong>al <str<strong>on</strong>g>insulati<strong>on</strong></str<strong>on</strong>g>.
