Post harvest h<strong>and</strong>ling<br />

• To improve post harvest quality, capsicum are cooled before market or storage by hydrocooling<br />

(before packing) or forced air cooling (after packing).<br />

• Capsicum are sensitive to chilling injury below 7°C.<br />

• Typical transit or storage conditions are 7°C to 13°C with high humidity <strong>of</strong> 90-95%.<br />

• Senescence <strong>of</strong> capsicum is hastened by exposure to ethylene, so storage with ethylene<br />

producing fruit is not recommended.<br />

Most common post harvest diseases are-Bacterial s<strong>of</strong>t rot , Anthracnose, Gray Mould<br />
