16Carrot Muffins1 1/2 cups flour2 tsp baking powder1/2 tsp baking soda1/2 tsp ground cinnamon1/4 tsp ground nutmeg -- or freshly grated1/4 cup sugar1 cup homemade rice or nut milk (or YÜ rice beverage)1/4 cup canola oil1 tsp vanilla extract2 cups grated carrots1/4 cup chopped nuts (optional)Procedure1 Preheat the oven to 375º F.2 Oil muffin tin with canola.3 Sift together in a large bowl the flour, baking soda, baking powder, sugar, cinnamon, and nutmeg. Wash and peel carrots before grating.4 Create a well in the center of the dry ingredients, then pour in the milk oil, and vanilla. Mix with a wooden spoon until just combined. DO NOT OVER MIX!5 Fold in the grated carrots and nuts (if using).6 Fill the muffin pans 3/4 full. Bake 12-15 minutes, or until a toothpick inserted in the center comes out clean.7 Let cool on a rack a few minutes before removing from the tins.Servings: 4Oven Temperature: 375°F
