On high heat, bring the stock to a boil and then lower the heat andsimmer for 1 hour.2 Strain the stock through a large colander or sieve, pressing out as much liquid as possible. If not using right away, can refrigerate in a sealed containerfor a few days, or freeze up to 6 months.
