Introduction Meat production in Alpine goat breed derives exclusively from suckling kids under two months of age. In Alpine goat, studies on meat and milk production by cross-breeding put in evidence that Fl, in comparison with puré breed, show a higher growth rate, carcasses with better characteristics, and a dairy production with higher dry matter contents. Previous triáis evidcnced that by cross breeding with Argéntala dell'Etna breed is possible to reach satisfactory yield levéis (Cosentino el al. 1996; Cosentino el al. 1997; Freschi et al. 1996; Gambacorta el al. 1997 ací; Massari et al. 1996). The aim of this trial is to deepen the knowledges on the effect of cross breeding Argéntala dell'EtnaxAlpine, and of the use of added essential amino acids in a substitutive of maternal milk on meat production. Material and methods The trial was carried out on 10 Alpine and on 10 Argéntala dell'EtnaxAlpine twin male kids. Kids suckled maternal colostrum in the first forty-eight hours from birth. Successively, two groups were formed: 5 Alpine and 5 Fl kids for each group. All kids were fed by reconstituted milk (dry matter 17%, crude protein 27%, fat 22.8 %, N-free extract 42.5%, crude fiber 0.6, and ash 7.1 %). Milk replacer was offered ad libitum by múltiple nipple feeder. To the milk of experimental group lysine (2%) and cystine+mefhionine (1%) amino acids were added. Kids were slaughtered at the age of 60 days. Carcasses, after 4 days refrigerating period at the temperatura of 4 °C, were measured (length of carcass, width of pelvis, width and depth of chest, length of leg, and length of half carcass) and were dissected in meat joints (neck, steaks, thoracic limb, brisket, lumbar región, abdominal región, and pelvic limb) according to the official method of italian Scicntific Association of Animal Production (M.A.F.- A.S.P.A., 1991) (figures 1- 2). Moreover, were weighted: thymus, omentum, blood shinks, skin, penck, empty intestine, kidney fat, kidneys, and testicles. Successively, the incidence percentage on carcass weight was determined. Data were submitted to statistical analysis by ANO VA. In order to normalise variances of variables determined as percentages, an angular transformation was effected using the arcsine function: x = arcsine p J /2, where p is the variable valué (Box et al. 1993; Camussi et al. 1995; Snedecor and Cochran, 1989). 466
