lang. Das Aged Beef ist intensiver marmoriert
als andere Steaks. Dazu der bis
zu 40-prozentige Wasser-Verlust, der das
Fleisch besonders zart macht.“ Das alles,
so schwärmen Connaisseurs, führe zu
„regelrechten Geschmacks-Explosionen“.
Diese Veredelung kostet nicht nur Zeit,
sondern auch Geld. Deshalb ist ein
Dry Aged Beef teurer als ein normales
Steak. Der Chef de Cuisine und sein
Team bevorzugen Entrecôte-Rinder aus
Pommern: „Deren Fleisch zergeht unseren
Gästen auf der Zunge.“ Und die sind
längst nicht mehr nur männlich. „Auch
immer mehr Frauen kommen auf den
Geschmack“, so Tom Tschierschke, „und
sind hinterher begeistert.“
Die „Alterung“ beginnt: Fleisch in großen Stücken aufgehängt
zu lagern und reifen zu lassen, hat eine lange
Tradition.

‘Aged meat’ may sound strange or even unappetising
to the uninitiated. For connoisseurs
like the guests at the ‘Délice La Brasserie’, however,
it is pure enjoyment and puts experts
into a state of ecstasy. Dry-aged beef makes
the best steaks in the world, culinary experts
the world over agree. The meat is left hanging
to mature for 21 to 28 days in the brasserie’s
ageing cabinet - at a controlled temperature
and up to 60 percent humidity. It’s a process
with a centuries-old history - and still on-trend
today. It’s cult status reaches beyond America;
European steak fans have also long regarded
matured beef as the It-meat.
“Good things take time,” says Chef de Cuisine
Tom Tschierschke. “During dry-ageing, the
flavour is developed by enzyme activity for
up to four weeks. Aged beef has more intense
marbling than other steaks, plus up to 40
percent water loss, which makes the meat particularly
tender.” Connoisseurs rave that all this
results in “a real taste explosion”.
The maturing process costs not only time, but
money too. As a result, dry-aged beef is more
expensive than a normal steak. The Chef de
Cuisine and his team prefer using Pomeranian
entrecôte beef: “the meat simply melts on the
tongue”. And it’s not just the men who order it:
“more women are gaining a taste for it all the
time,” says Tom Tschierschke, “and are really
enthusiastic afterwards.”
