Final remarks<br />

This book aims to preserve and instil<br />

pride in traditional food items and<br />

recipes to counter the use of convenience<br />

foods that have lower nutritional value<br />

but are permeating both urban and<br />

rural communities. The world is more<br />

concerned than ever about the food we<br />

eat and how we produce it. This book<br />

was completed during the COVID-19<br />

pandemic period, a time in history when<br />

global food systems were experiencing<br />

large disruptions. Changes in trade of<br />

food from epicentres of production<br />

have permeated all the way into village<br />

life. How important then to draw our<br />

attention to the domestically produced<br />

and nutritionally rewarding foods that<br />

are continuing to form the food identity<br />

of Timorese people – a source of food<br />

sovereignty in an era of uncertainty.<br />
