Maneira atu budu aimanas<br />

1. Fase no hamoos aimanas, liis, bilimbi no<br />

hasai hotu kain sira. Loke fahe liis mutin isin.<br />

liis mutin ho masin ka uza blender de’it.<br />

3. Ko’a bilimbi halo ki’ik-ki’ik depois budu<br />

de’ut/blender ona.<br />

4. Rai iha toples ka masa, taka metin nia matan.<br />

5. Budu hela mínimu to’o loron ida antes han.<br />

In its simplest form, aimanas or chilli<br />

pickle is made from chillies and salt.<br />

The addition of other ingredients<br />

depends on what is in season or<br />

available in people’s gardens. This<br />

recipe comes from the Fish House<br />

women in Ililai, Lautém municipality,<br />

who usually use either limes or<br />

bilimbi fruit to make their aimanas.<br />

Makes 1 large jar (approx. 1 L)<br />

Ingredients<br />

4½ cups<br />

chillies<br />

40 bilimbi fruit (or substitute<br />

20 small limes)<br />

7 bulbs garlic (small variety)<br />

6 tablespoons salt<br />

Method<br />

1. Wash the chillies and bilimbi, and<br />

remove any stalks. Separate and peel<br />

the garlic cloves.<br />

2. Crush the chillies, garlic and salt<br />

together with a stone mortar and<br />

pestle, or roughly chop in a blender.<br />

3. Chop the bilimbi (whole fruit) into<br />

small pieces and combine with the<br />

chilli mixture.<br />

4. Scoop into a plastic container or glass<br />

jar and tightly close the lid.<br />

5. Leave for at least 1 day before eating.<br />
