Recipe: Dried fish with chilli sauce<br />
To make dried fish, the women in<br />
Adara slice the fish lengthways, wash<br />
them thoroughly, sprinkle with salt,<br />
then leave for half an hour. The salted<br />
fish are then placed on a bamboo<br />
drying rack and allowed to dry for two<br />
days, flesh-side up in the morning and<br />
skin-side up in the afternoon.<br />
Dried fish are delicious eaten<br />
with spicy chilli sauce and boiled<br />
vegetables, such as cassava leaves,<br />
papaya leaves and papaya flowers.<br />

Ingredients<br />
4 whole, medium dried fish<br />
2 /3 cup (150 mL) cooking oil<br />
Method<br />
1. Wash the dried fish in hot water.<br />
2. Heat the oil in a frying pan. Place<br />
the fish in the hot oil and fry for<br />
approximately 1 minute on each side.<br />
Remove from the pan and put aside on<br />
a plate.<br />
3. Prepare the chilli sauce: wash the<br />
chillies and lime, and separate and<br />
peel the garlic cloves. Chop the chillies,<br />
garlic and lime (whole fruit, including<br />
peel) into small pieces and put in a<br />
small bowl. Add the soy sauce and stir<br />
with a spoon until the flavours are well<br />
mixed.<br />
4. Serve with rice and mixed boiled<br />
vegetables, such as cassava leaves,<br />
banana flowers and papaya flowers.<br />
