Recipe: Shrimp curry<br />

recipe for shrimp curry comes<br />

Serves 4<br />
Ingredients<br />
1 medium eggplant<br />
1½ teaspoons<br />
salt<br />
2 tablespoons cooking oil<br />
1 bowl (400 g) shrimp (or prawns)<br />
1 clove garlic<br />
100 mL coconut milk<br />
1 cup water<br />
½–1 tablespoon curry powder<br />
½ teaspoon<br />
pepper<br />
1 sprig parsley<br />
Method<br />
1. Wash the eggplant, then cut into cubes and<br />
sprinkle with 1 teaspoon of salt.<br />
2. Heat 1½ tablespoons of oil in a frying pan,<br />
lightly fry the eggplant, then put aside on a<br />
plate.<br />
3. Wash the shrimp and cut off legs (retain<br />
heads, tails and shells).<br />
4. Peel and crush the garlic.<br />
5. Heat ½ tablespoon of oil in a frying pan and<br />
lightly fry the garlic.<br />
6. Add the coconut milk, then the water and<br />
stir until boiling. (If too thick, add a little<br />
more water.)<br />
7. Add the curry powder and stir.<br />
8. Add the shrimp to the coconut milk mixture<br />
and simmer for 2–4 minutes.<br />
9. Stir the fried eggplant into the shrimp<br />
mixture.<br />
10. Season with pepper and ½ teaspoon salt.<br />
11. Dish onto a plate and decorate with parsley.<br />
Serve with rice and vegetables.<br />
