Recipe: Kelo’s dried seaweed salsa<br />

Dried seaweed made from fresh<br />

Atauro seaweed is produced<br />

and sold by Empreza Di’ak in Dili<br />

supermarkets. To make the dried<br />

product, the fresh seaweed is<br />

washed with water twice, placed<br />

inside a crate, then covered with<br />

thick plastic sheeting and left in<br />

the sun until its colour fades. The<br />

seaweed is then washed again in<br />

warm water and allowed to dry<br />

before being placed inside a solar<br />

drying tent. The seaweed is sundried<br />

for one or two days, then<br />

packaged, ready to sell.<br />

seaweed can be used to<br />

make soups, salads, snacks<br />

and desserts. This recipe was<br />

created by Chef Kelo from Agora<br />

Food Studio in Dili, known for<br />

its delicious and innovative<br />

dishes made using local<br />

Timorese produce.<br />

Serves 4, as a side dish<br />

Ingredients<br />

65 g dried seaweed<br />

8 cloves garlic (small variety)<br />

8 red shallots<br />

6 chillies<br />

2 pieces ( 2 /3 finger length<br />

or 4 cm each)<br />

1 piece ( 2 /3 finger-length<br />

or 4 cm)<br />

galangal<br />

ginger (local variety)<br />

2 stems lemongrass<br />

2 tomatoes<br />

2 lime leaves<br />

Method<br />

1. Wash the dried seaweed with cold water.<br />

2. Peel/wash the garlic, shallots, chillies,<br />

galangal, ginger, lemongrass, tomatoes and<br />

lime leaves, and slice into small pieces.<br />

3. Place the seaweed in a saucepan of boiling<br />

water and boil until soft.<br />

4. Drain the seaweed, rinse with clean water<br />

and chop into pieces.<br />

5. Mix the seaweed with the other chopped<br />

ingredients.<br />

6. Serve with batar daan (traditional dish made<br />

from boiled corn).<br />
