Mariana buys various types of fish from<br />

the local fishers and traders, depending on<br />

what is caught. Different fish are used for<br />

different dishes: Spanish mackerel is served<br />

grilled with chips or as fish curry; pomfret<br />

and trevally are steamed or simmered;<br />

while fish soup is often made with snapper<br />

or barracuda. Mariana recently shared<br />

some of these recipes with a group of<br />

women from Lautém municipality, who<br />

came to Dili for training and inspiration<br />

for their own newly established beachside<br />

restaurant in Ililai.<br />
