Subject: Taste Panels<br />

Purpose: To determine the acceptability of a product be<strong>for</strong>e purchase and service.<br />

Policy: Taste panels will be conducted at least monthly, more often if deemed necessary, to<br />

objectively evaluate products.<br />

Procedure:<br />

1. Taste panels will be regularly scheduled on the third Friday of each month at 1:30 p.m.<br />

2. A group of no more than 10 and no fewer than 5 people will be selected prior to the<br />

date of the panel by the <strong>Food</strong> Stores Manager and as appointed by the Director.<br />

3. The panel will include representatives from Purchasing, Nursing <strong>Service</strong>s, <strong>Food</strong> and<br />

Nutrition <strong>Service</strong>s, Administration, and other interested personnel.<br />

4. Tabulation of the results of the panel will be completed by the <strong>Food</strong> Stores Manager and<br />

kept on file <strong>for</strong> future reference.<br />

5. Results of the panel will be discussed with the Director, Assistant Director, Clinical<br />

Dietitians, and/or Production Manager.<br />

6. The Clinical Dietitian, Production Manager, Assistant Directors, and Director may recommend<br />

products <strong>for</strong> testing. This should be done at least a month prior to scheduled panel.<br />

7. Procedure outlined in policy <strong>for</strong> taste panels dated 10/04/87 is still applicable (attached).
