This is one of the most thorough reference books on food service management and<br />

includes references from authors who practice in areas besides food service management. It<br />

presents detailed in<strong>for</strong>mation on such topics as hazard analysis critical control point (HACCP),<br />

Occupational Safety and <strong>Health</strong> Administration (OSHA) regulations, disaster or emergency<br />

planning, newest concepts in marketing, continuous quality control, fire safety, presentation<br />

methods <strong>for</strong> menu service, and an improved chapter on clinical nutrition management. Because<br />

communications and human resource issues involve most of a manager’s time, these two chapters<br />

have been updated to present the latest in<strong>for</strong>mation available. A chapter is devoted to<br />

in<strong>for</strong>mation management, and chapters on product selection and purchasing have been revised<br />

and contain new material. This book is a management and operational handbook.<br />

Ruby writes in a style that is descriptive but not diffuse, that is thorough but not rambling.<br />

This book will be a valuable addition to a food service operation’s library.<br />

At present Ruby is the president and owner of <strong>Food</strong>service Management Consultants and<br />

program director and author of the Dietary Manager Training Programs. She presents workshops<br />

on HACCP, food safety, and emergency preparedness and is definitely a standard <strong>for</strong> our<br />

industry. She received the (IFMA [International <strong>Food</strong>service Manufacturers Association]) Silver<br />

Plate <strong>for</strong> <strong>Health</strong> <strong>Care</strong> Operations and has been honored three times by the American Dietetic<br />

Association (ADA), having received the highest honor given annually to a dietitian—the<br />

Marjorie Hulsizer Copher Award. She is involved in not only ADA but also the American<br />

Society of <strong>Food</strong> <strong>Service</strong> Administrators, <strong>Food</strong> <strong>Service</strong> Consultants Society International, and<br />

many, many others. She has given presentations in thirty-five states, some states multiple times,<br />

and is active in community affairs. Ruby has been publishing articles in magazines and journals<br />

since 1963, far too many to list.<br />

I close by saying that Ruby is an inspiration and role model to many in the industry. I am<br />

pleased to acknowledge that following her example has contributed to my own professional<br />

growth, including being honored in 2001 with the Silver Plate in <strong>Health</strong> <strong>Care</strong>. Ruby has contributed<br />

more than any other single person that I have ever had the pleasure of meeting or<br />

knowing.<br />
