About the Author<br />

Ruby P. Puckett, M.A., R.D., F.C.S.I., retired from Shands Hospital at the University of Florida<br />

in Gainesville after serving as director of <strong>Food</strong> and Nutrition <strong>Service</strong>s <strong>for</strong> twenty-seven years<br />

and started her own food service management consulting company. Since 1972 she has been the<br />

program director <strong>for</strong> the Dietary Managers Training Program in which more than 32,000 students<br />

have been enrolled. She is a prolific author, having published ten books, four with coauthors, and<br />

contributed five chapters to textbooks. She has published 350 articles, many peer reviewed, and<br />

given more than 400 talks on food and nutrition topics to professional, educational, civic, and religious<br />

organizations. She has held offices in local, state, and national food and nutrition organizations<br />

and has served on the boards of editorial, charitable, and financial organizations.<br />

In 2003 Puckett was honored with the Marjorie Hulsizer Copher Award, the highest<br />

honor annually bestowed on a dietitian by the American Dietetic Association (ADA). Other<br />

awards she has received are the International <strong>Food</strong> Manufacturers Association Silver Plate<br />

Award <strong>for</strong> <strong>Health</strong> <strong>Care</strong>; the Ivy Award of Restaurateurs of Distinction; the Distinguished Pace<br />

Setter Award from the Round Table of Women in <strong>Food</strong> <strong>Service</strong>; the ADA Award <strong>for</strong> Excellence<br />

in Management; the ADA Medallion; and Alumni of the Year Award from College of Human<br />

Science, Auburn University, Auburn, Alabama—to name a few. She has traveled worldwide<br />

with three branches of the U.S. military (Marines, Air Force, and Navy) as an evaluator of military<br />

food service <strong>for</strong> the Ney-Hill and Hennessey Award. She is listed in numerous directories<br />

of Who’s Who.
