Smoked Baked Garlic Chicken<br />

2 whole chickens<br />

1 cup chopped garlic <strong>from</strong> a jar<br />

3 Tbs brown mustard seeds, crushed<br />

2 dried Tabasco peppers, crushed<br />

2 Tbs black pepper<br />

2 Tbs nuoc nam<br />

2 Tbs Worcestershire sauce<br />

1 cup apple cider vinegar<br />

1/4 cup red wine<br />

2 Tbs paprika<br />

2 cups water<br />

1 Tbs quality soy sauce<br />

1 Smoke chickens for 1 hour at 225F.<br />

2 Mix toge<strong>the</strong>r jar garlic, mustard seeds, Tabasco peppers, black pepper, nuoc nam, Worcestershire sauce, and<br />

paprika. Remove chickens <strong>from</strong> smoker and place in a covered Dutch oven. Spoon mixture into <strong>the</strong> cavities<br />

of <strong>the</strong> whole chickens and baste outsides of <strong>the</strong> chickens with it also. Add water and apple cider vinegar.<br />

Bake in your range oven, covered, for 1 hour at 325F. Remove cover <strong>from</strong> Dutch oven, raise heat, and bake<br />

for an additional 30 minutes at 350F. Remove <strong>from</strong> heat and serve.<br />
