Smoky Black Bean and Corn Chowder<br />

1/2 cup yellow onions, chopped<br />

4 Tbs butter or margarine, melted<br />

1/4 cup all-purpose flour<br />

1/4 tsp black pepper, freshly ground<br />

1 1/4 tsp salt<br />

4 cups milk<br />

17 oz whole kernel corn, canned, drained<br />

4 smoked sausage links, sliced<br />

8 oz black beans, canned, drained<br />

In a saucepan, sauté onion in butter until tender but not brown. Stir in flour, salt and black pepper. Add milk, and<br />

bring to a boil, stirring constantly until thick and bubbly, about 1 minute. Stir in drained corn, sausage slices and<br />

drained black beans. Reduce <strong>the</strong> heat and simmer for 10 minutes.<br />
