Herbed Pecan Rub<br />

1/2 cup pecans, broken<br />

3 cloves garlic, cut up<br />

1/2 cup fresh oregano<br />

1/2 cup fresh thyme<br />

1/2 tsp lemon peel, finely shredded<br />

1/2 tsp black pepper<br />

1/4 tsp salt<br />

1/4 cup cooking oil<br />

1 In a blender or food processor, combine all ingredients EXCEPT oil. Cover and blend several times, scraping<br />

sides, until a paste forms. With machine running, gradually add oil until mixture forms a paste. Rub onto fish<br />

or chicken.<br />

2 Makes 1/2 cup, enough for 3 pounds of meat.<br />
