Don's Poultry Brine<br />

1 gallon water<br />

1/4 cup vinegar, (white)<br />

1 Tbs pickling spice<br />

1/2 tsp allspice<br />

1 tsp black pepper<br />

1 tsp garlic powder<br />

1 tsp onion powder<br />

1 tsp celery salt<br />

1 1/2 cups salt<br />

1/4 cup brown sugar<br />

1 Tbs maple extract<br />

1 tsp Liquid Smoke<br />

1 To make brine: Dissolve <strong>the</strong> sugar and salt in <strong>the</strong> cold water. Add spices to <strong>the</strong> vinegar, bring to a boil and let<br />

cool. Add vinegar and spices to brine. Next, add maple extract and Liquid Smoke to <strong>the</strong> brine.<br />

2 Editor-- Don's brine recipe can also be used for brining breasts, quarters or whole chickens.<br />
