Kansas City Baked Beans<br />

1 lb navy beans, dried w/ water to cover<br />

6 cups water<br />

1 tsp salt<br />

4 slices bacon, crisp, chopped<br />

1 medium onion, chopped<br />

2 medium bell pepper, chopped<br />

1 cup barbecue sauce<br />

1 cup apple cider<br />

1/3 cup dark molasses, unsulfured<br />

1/4 cup mustard<br />

2 Tbs cider vinegar<br />

1 cup burnt ends, shredded (optional)<br />

1 Soak beans for at least 4 hours in water to cover, <strong>the</strong>n drain.<br />

2 In a large heavy sauce pan, combine <strong>the</strong> beans with <strong>the</strong> 6 cups water. Bring beans to boil over high heat, and<br />

<strong>the</strong>n reduce to a simmer. Cook slowly, stirring up <strong>from</strong> <strong>the</strong> bottom occasionally, for 2 to 3 hours. Stir in <strong>the</strong><br />

salt after <strong>the</strong> beans have softened. Add more water if <strong>the</strong> beans begin to seem dry. The beans are ready when<br />

<strong>the</strong>y mash easily but still hold <strong>the</strong>ir shape.<br />

3 Preheat oven to 325F. In a skillet fry bacon until crisp. Remove <strong>the</strong> bacon and drain. Add onion and pepper<br />

to <strong>the</strong> rendered bacon drippings and sauté until soft.<br />

4 Transfer bacon and onion mixture to a greased Dutch oven or o<strong>the</strong>r baking dish. Mix in remaining<br />

ingredients. Bake, covered, for about 1 hour. Uncover and bake for an additional 15 - 30 minutes<br />
