Chimichurri Sauce - 2<br />

1/2 cup oil<br />

1 cup vinegar<br />

1 tsp salt<br />

2 cloves garlic, crushed<br />

2 Tbs parsley, finely chopped<br />

1 scallion, chopped<br />

1 small tomato, peeled, seeded, chopped<br />

1 small sweet pepper, finely chopped<br />

1/2 tsp cumin<br />

1/2 tsp paprika<br />

1/2 tsp chili powder<br />

2 bay leaves, broken in small pieces<br />

1/2 tsp oregano<br />

Mix ingredients toge<strong>the</strong>r in a bottle or jar. Let stand for at least 12 hours, or a full day in a dry place. Shake prior<br />

to use.<br />
