3 lbs pork, fine ground<br />

2 lbs veal<br />

1 Tbs salt<br />

1 Tbs pepper<br />

2 tsp nutmeg<br />

2 tsp mace<br />

1 cup water<br />

Combine all ingredients. Stuff into hog casing with above mixture. Cover <strong>the</strong> Bratwurst with hot water, bring to a<br />

boil and <strong>the</strong>n remove <strong>from</strong> heat. Allow sausages to stay in water until <strong>the</strong>y feel firm, <strong>the</strong>n drain <strong>the</strong>m. Dip in milk<br />
