First edition with the additions on rose water and perfume, of this very<br />

rare guide to the production of sorbets, ice creams, marzipan and fruit<br />

conserves. Of particular <strong>in</strong>terest is the detailed description of cream ices<br />

and frozen custard, made with eggs, cream and sugar rather than Xavoured<br />

water and sugar. Detailed <strong>in</strong>structions are given for the production of ices<br />

<strong>in</strong> the shape of various fruits – still today a ma<strong>in</strong>stay of the elegant Italian<br />

gelateria. The second part is devoted to various recipes for marzipan, and<br />

the manufacture of marzipan fruits and vegetables. Smaller sections deal<br />

with liqueurs and Xavoured dr<strong>in</strong>ks. An additional chapter covers the production<br />

of rose liqueur, and eau de cologne (Spirito composto, detto Acqua di<br />

Colonia), giv<strong>in</strong>g a detailed description of its preparation.<br />

Landriani’s work is very rare <strong>in</strong>deed, and bibliographically confus<strong>in</strong>g.<br />

The cul<strong>in</strong>ary bibliographies tend to give the 1816 edition as the Wrst, even<br />

though the work was <strong>in</strong> fact Wrst published <strong>in</strong> 1795, with this 1815 edition<br />

be<strong>in</strong>g the Wrst enlarged. The work was repr<strong>in</strong>ted <strong>in</strong> 1816, 1820, and<br />

1823.<br />

<strong>Rare</strong>, this second edition not <strong>in</strong> B.IN.G, Paleari, Westbury, Vicaire or Bitt<strong>in</strong>g; no<br />

copy of this Wrst edition found <strong>in</strong> RLIN, OCLC or NUC; see B.IN.G 1084 and<br />
