First edition with the additions on rose water and perfume, of this very
rare guide to the production of sorbets, ice creams, marzipan and fruit
conserves. Of particular interest is the detailed description of cream ices
and frozen custard, made with eggs, cream and sugar rather than Xavoured
water and sugar. Detailed instructions are given for the production of ices
in the shape of various fruits – still today a mainstay of the elegant Italian
gelateria. The second part is devoted to various recipes for marzipan, and
the manufacture of marzipan fruits and vegetables. Smaller sections deal
with liqueurs and Xavoured drinks. An additional chapter covers the production
of rose liqueur, and eau de cologne (Spirito composto, detto Acqua di
Colonia), giving a detailed description of its preparation.
Landriani’s work is very rare indeed, and bibliographically confusing.
The culinary bibliographies tend to give the 1816 edition as the Wrst, even
though the work was in fact Wrst published in 1795, with this 1815 edition
being the Wrst enlarged. The work was reprinted in 1816, 1820, and
1823.
