Chef of the Year 2021 award from “Restaurant &<br />

Hotel Guide 2021”. His style – a healthy balance<br />

of down-to-earth and modern – shows influences<br />

of Thorsten Probost’s herb cuisine. <strong>No</strong> wonder,<br />

seeing as Matthias Schütz cooked with him for<br />

more than two years. From traditional inn to<br />

award-winning cuisine – the 36-year-old has<br />
