Another thing that has changed is the dress code. Today<br />

you no longer need to wear a dinner jacket and tie to come<br />

to the restaurant. Things have become a lot more laid back<br />

and transparent. Transparency is key when it comes to<br />

the products, too. In the past people used to look at the<br />

neighbouring countries and import en masse and now<br />

regionality is at the focus. Which means that there are<br />

more producers and, consequently, a wider selection.<br />

L.L. Many toques, forks, points, awards and now the<br />

Chef of the Year: what do all these awards mean to you?<br />

M.S. They are a seal of approval, and I am proud of them.<br />

But I don’t want to attach too much importance to them<br />

either. I definitely do not want to rest on my laurels and<br />

end up standing still. That would be the wrong approach<br />

for the future. Remaining self-critical and questioning<br />

yourself is necessary.<br />
