In quegli anni molti liguri<br />
emigrati nelle Americhe nel<br />
periodo natalizio ordinano<br />
il pandolce e il famoso torrone<br />
Copello. Ha così inizio<br />
un fiorente commercio oltre<br />
oceano che favorisce la<br />
conoscenza delle specialità<br />
dolciarie liguri nel mondo e<br />
che dura tuttora. «Spediamo<br />
ancora il pandolce negli<br />
Stati Uniti e, in particolare,<br />
nell’America del sud, in<br />
Giappone e in molti paesi<br />
d’Europa a molte famiglie<br />
di origine chiavarese e ligure<br />
che richiedono il panettone<br />
genovese per le feste<br />
natalizie.<br />
Tra le specialità della nostra<br />
produzione – spiega Luca<br />
Antonini, attuale proprietario<br />
– ci sono anche la marmellata<br />
Cotognata e lo sciroppo<br />
di rosa. Da novembre<br />
incomincia la spedizione<br />
anche di “prodotti freschi”,<br />
cioè dolci e pasticceria preparata<br />
e confezionata nel<br />
nostro laboratorio, a molti<br />
negozi in Inghilterra per la<br />
vendita al minuto. Ci sono molti clienti stranieri<br />
che dopo aver gustato i nostri prodotti ne acquistano<br />
per spedirli a casa loro oppure ad amici<br />
e parenti; si instaura così anche un rapporto<br />
di amicizia che viaggia per anni su linee telefoniche<br />
e via web».<br />

headlines, “Electricity Makes<br />
Pandolce [Genoese<br />
Sweetbread] in the Pasticceria<br />
Copello”.<br />
In those years, the many<br />
<strong>Liguria</strong>ns who had emigrated<br />
to the Americas, would order<br />
pandolce at Christmas, along<br />
with the famous nougat,<br />
Torrone Copello. This<br />
flourishing commerce across<br />
the seas encouraged<br />
international awareness of<br />
<strong>Liguria</strong>n dessert specialties.<br />
This continues today, “We still<br />
send pandolce to the United<br />
States and, even more, to<br />
South America,” explains Luca<br />
Antonini, the present owner.<br />
“We ship to Japan, and most of<br />
the countries in Europe. There<br />
are many families of Chiavarese<br />
or <strong>Liguria</strong>n origin who request<br />
Genoese pandolce for<br />
Christmas. Among the<br />
specialties of our production is<br />
also Cotognata marmalade and<br />
rose syrup. Beginning in<br />
November we start to ship<br />
‘fresh products’ as well. These<br />
are desserts and pastries<br />
prepared and packed by our<br />
workshop, and we send them to many stores in the<br />
U.K. for retail sales. Foreign clients who have<br />
sampled our products often purchase them to send<br />
home or to friends and relatives. This is how we<br />
make friendships that span the years and travel the<br />
phone lines and internet.”<br />
