è un albergo ristorante e si chiama “Amici”, ha prosperato<br />
sugli scambi commerciali tra il ducato di Parma<br />
e il mare lungo la via del sale. Gli uomini della costa<br />
la percorrevano per portare ai mercati della<br />
pianura Padana sale, olio e pesci, mentre in senso opposto<br />
portavano carne, grano e formaggi.<br />
Oggi “Amici” è l’impresa più longeva della provincia.<br />
Ci sono documenti che daterebbero al 1750 l’inizio<br />
dell’attività. E ne esiste uno del 1823 che dimostra<br />
il via vai di viaggiatori da quelle parti. E’ il registro<br />
delle presenze in cui sono indicate professione, provenienza<br />
e direzione dell’ospite il quale era tenuto<br />
a versare un tributo al sindaco che oggi chiameremmo<br />
tassa di soggiorno. Allora c’era anche la stalla<br />
dove venivano ricoverati i cavalli che tiravano<br />
carri e carrozze.<br />
L’albergo ristorante oggi è gestito dai tre fratelli<br />
Marcone: Michela, che si occupa di amministrazione<br />
e fa anche il sindaco di Varese, Marco, delegato<br />
agli approvvigionamenti e alla cucina e Alessandra,<br />
che aiuta Marco ai fornelli ed è specializzata nei dessert.<br />
«Non sappiamo chi ha fondato la locanda, sappiamo<br />
che a gestirla all’inizio dell’800 era Michele<br />
Marcone – racconta Marco – e dopo di lui c’è stato<br />
Luigi, mio nonno, insieme al fratello Vincenzo. Poi è<br />
arrivata la generazione di mio padre Michele e la sorella<br />
Rosa. E oggi tocca a noi».<br />
Una saga questa dei Marcone che ha attraversato dominazioni,<br />
crisi, guerre, periodi di desolazione e stagioni<br />
di grande fervore commerciale. Come è riuscita<br />
questa famiglia a sopravvivere a tutto questo senza<br />
mai gettare la spugna? Marco annuisce e sorride: «È<br />
stato possibile proprio grazie alla gestione familiare<br />
che ha consentito di ammortizzare anche i momenti<br />
difficili. In una dimensione strettamente imprenditoriale<br />
non sarebbe stato possibile considerando la<br />
marginalità territoriale di questa zona, ai confini della<br />
provincia di Spezia e ai confini del Tigullio. Ma è<br />
una zona che ha saputo caratterizzarsi convertendosi<br />
alle produzioni biologiche di carne e formaggio.<br />

- “Amici” è rinomata non solo per la storia che<br />
porta sulle insegne ma anche per la qualità della cucina.<br />
Si fregia da alcuni anni della chiocciola di Slow<br />
Food grazie ai piatti della tradizione ligure. Tutti di<br />
terra. Dai ravioli alla genovese ai croxetti.<br />

prospered by the commercial exchanges carried out<br />
between the Duchy of Parma and the sea, along the Via<br />
del Sale (the Salt Road). Men from the coast traveled the<br />
road to bring salt, olive oil, and fish to the markets of<br />
the Po River Valley. While the north sent down meat,<br />
grain, and cheeses.<br />
Today “Amici” is the longest running commercial activity<br />
in the province. Documents date its start to 1750.<br />
Another in 1823 shows the character of travelers in this<br />
area. Recorded in the register are the professions,<br />
origins, and destinations of the guests, who were<br />
obliged to pay a fee to the mayor which today might be<br />
called a lodging tax. At the time there were also stables<br />
for the horses that pulled the carriages and carts<br />
travelling on the Salt Road.<br />
The hotel and restaurant today are run by three<br />
members of the Marcone family. Sister, Michela is the<br />
manager, as well as the Mayor of Varese. Brother, Marco<br />
takes care of supplies and the kitchen. And sister,<br />
Alessandra, helps Marco cook and specializes in desserts.<br />
“We don’t know exactly who founded the inn, but we<br />
know that Michele Marcone was running it in the early<br />
1800s,” tells Marco. “After him came Luigi, my<br />
grandfather, along with his brother Vincenzo. Then in<br />
my father Michele’s generation, he ran it with his sister<br />
Rosa. And now it’s our turn.”<br />
The Marcone saga has survived conquest, crises, wars,<br />
periods of desolation, and seasons of great commercial<br />
fervor. How has this family survived all this without ever<br />
throwing in the towel? Marco nods and smiles, “It has<br />
been possible thanks to our family management. This<br />
has allowed us to soften even the most difficult<br />
moments. With a strictly entrepreneurial eye to things,<br />
our success should not be possible, considering the<br />
territorial marginality of this area at the edges of the<br />
Province of La Spezia and the borders of Tigullio. But it<br />
is an area that has shown nimbleness in converting to<br />
organic meat and cheese production. Merit must be<br />
given to Maurizio Caranza, the mayor in the nineties<br />
whose intuition brought organic to the valley.”<br />
Amici is renown not just for the story of its sign, but<br />
also for the quality of its cuisine. It prides itself on its<br />
participation in Slow Food, thanks to its traditional<br />
<strong>Liguria</strong>n dishes, all from the land. From the ravioli alla<br />
genovese to the croxetti pasta made by hand and<br />
modeled by a special mold.<br />
