che ha prosperato sugli scambi commerciali lungo la via del sale e che oggi trae benefici dalla vallata del Vara
consacrata al biologico
Hotel - Restaurant Amici in Varese Ligure was first called “The Inn Under the Sign of the Bottle at the Top of the
Village” when it opened in 1750. The longest running enterprise in the Province of La Spezia, it prospered on the
Salt Road linking north Italy to the sea through the Vara Valley, which now specializes in organic crops

bandito in fuga. Quando iniziò l’attività, verso
la metà del 1700, aveva un nome bizzarro “Locanda
all’insegna della bottiglia in cima al paese”. Il
paese è Varese Ligure, il comune più settentrionale
della provincia di Spezia e un borgo tra i più belli
d’Italia, a una dozzina di chilometri dal passo delle
Cento Croci che collega la Val di Vara con la Val di
