CHEF 1340 Meat Preparation <strong>and</strong> Cooking (2-4-3) Study of the<br />

poultry, seafood, <strong>and</strong> game. Includes moist, dry, <strong>and</strong> combination<br />

heat preparation methods as related to both classical <strong>and</strong> modern<br />

CHEF 1441 American Regional Cuisine (2-6-4) A study of the<br />

development of regional cuisine's in the United States with<br />

emphasis on the similarities in production <strong>and</strong> service systems.<br />

Application of skills to develop, organize, <strong>and</strong> build a portfolio of<br />

preparation, foundations, form work, safety, tools, <strong>and</strong> equipment.<br />

<strong>and</strong> st<strong>and</strong>ards applicable to building construction <strong>and</strong> inspection<br />

Technology/Technician (1-0-6) Career-related activities<br />

encountered in the student's area of specialization offered through<br />

student. Under the supervision of the college <strong>and</strong> the employer,<br />

the student combines classroom learning with work experience.<br />
