Like most projects of this sort, there is a group of people who

This book was written on a Macintosh G3 running MachTen and MacOs
8.6, using OxTex, Alpha, and Canvas. It was later converted to
Microsoft Word, because it does not matter if it's the best tool, it only
matters that everyone has it.
