Figure 2.7 illustrates the mean log 10 density <strong>of</strong> Salmonella enterica<br />

subspecies enterica bi<strong>of</strong>ilm attached to the 5 surfaces (Y Axis) in<br />

comparison to the surface roughness (Ra measured in nanometres) <strong>of</strong> each<br />

surface (X axis). The S. enterica strains include the mean log 10 density <strong>of</strong> 6<br />

Salmonella enterica subspecies enterica serovar Agona, 3 S. Typhimurium<br />

and 2 S. Enteritidis strains listed in Table 2.6. The mean surface roughness<br />

(Ra) assessment was repeated in triplicate as indicated from the 3 readings<br />

for each surface displayed on the graph.<br />
