FOOD PRODUCTION MANAGEMENT Program of Studies Leading to the A.A.S. Degree The Food Production Management Program is designed to help meet the growing demand for well-trained personnel in the high-volume food service industry. The course materials place emphasis on the responsibilities of the food service manager including: nutritional values, food preparation and knowledge and training of maintenance procedures for sanitary conditions within the food production facility. The program includes academic classroom study and practical hands-on laboratory work. The methodologies of cooking and sanitation are stressed. Food services management jobs are available in high-volume restaurants, institutions (colleges, schools, in-plant feeding, office complexes, correctional facilities, hospitals) country clubs and central commissionary kitchens. Assistance is provided to students for apprenticeship training, part-time jobs and fulltime positions during and after completion of the Food Production Program. A limited number of scholarships are available from the industry annually. An existing and continuing opportunity for internship with Disney World, Orlando, Fla. and a working relationship with Seafarers International Union. First Year First Semester Sem.-Hrs.
